Doubtful... most ATC comms are in English in most cases.

Your best bet is to look for the couter-part to the FAA in Spain and other Spanish speaking countries and see what publications are available. In the USA, FAA order 7110.65 is the "handbook" by which controllers get their "approved phraseology" from. My guess is there are similar publications out there from other countries. The ICAO probably won't be any help. I believe the only official languages they use are English, French and Russian.

I'm not sure exactly what you are looking for, I just came back from Madrid and the only difference I heard was 'Bueno Dias' and 'Adios'. The rest of it was the same as US.
